“A Slice of Shanghai Virginia” brings together two types of shortcakes, both said to have originated in Britain—the Ruby Cake, popular in Shanghai, and the Strawberry Shortcake, first recorded in The Virginia Housewife.  The project explores the cultural circulation of food through processes of import and export, and the transformations of identity that accompany it.  It further extends into a reflection on the boundaries of what is considered “local food”: when ingredients and memories continually migrate within a global context, what does locality truly mean?
